Shrimp can be like that... shy... when they are single individuals. If you get a nother or two, they come out much more. I had 3 in my tank in Ohio and they were out all the time, but when I had only one at first, I was lucky to see it.
I have a fairly nice size fire shrimp and he is a ham. He is almost always out in the open and really wants to clean my fish but not many of them let him. I also have a cleaner shrimp and a Banded Coral Shrimp and they all see to get along faily well. At feeding time I make sure I feed each of them individually from the turkey baster and they line up waiting.
They are also great to watch as they rummage around.
