So is it that some chalices grow upwards in a cup and some grow out and basically encrust?

Depends on the species.. but most of the 'encrusters' will cup out over time. A lot of that depends on their placement though. If they have a large flat area, they will tend to stay flat until they reach a border that forces them to grow vertically.
I've got one thats actually scrolling like a monti cap.
