Hooking batteries in parallel

I have historically used deep cycle marine batteries as a back-up power source for my vortechs ... I prefer them over the stock battery back-up as they provide longer power back-up ... since I live out in the boonies, I did with frequent power outages so I am a little paranoid about this aspect :)

I would like to double up on my batteries and run two of them in parallel ... beyond wiring them positive to positive and negative to negative, will a battery tender charger manage both batteries?

Yes, positive to positive and negative to negative, but not in a string! See the attached image.

A battery minder will manage both, although it may take longer, and will hit both batteries with the same current. This shouldn't be a big deal if both are in decent shape. It can be an issue with with series charging (not what you are doing), particularly in LiPo battery cells in series where one ends up overcharged and starts a fire, but that's a different situation.
