Ok crazy quesion I know can you have too big a skimmer ?

I have a little skimmer that was rated for up to 100 gal , my tank is 80 gal. I had issues with it on and off but it cleans the water at least it had a lot of green gunk in it . I had a lager octpus reef skimmer . this this is big . just barely fits in my sump. I not sure how big a tank it will do but I am sure it is well over 100 gal. It is a older model I have had it in my shed for a while. It is working but the gunk in it is not as dark as the little one , is this normal ?

That rating is fine. You get into trouble when they are hundred of gallons off 100 gallon tank with 300 gallon + skimmer

you should be fine with a bigger skimmer, i have a bubbleking mini 200 which is for 250 gallons on a 90 gallon with frag tank, and 20 gallons in the sump for a combined 130-140 gallons and imo manufactures over rate thier skimmers..

I generally look for a skimmer rated to upwards of double what my total water volume is. I agree manufacturers over-rate their skimmers. i have about 200g of water and my skimmer is rated for 350.
