Harvesting/farming cheato - How and when does one do it?

[On several occasions I have read about harvesting cheato or "farm[ing] it out to export locked in nutrients". Is there a special procedure to do so or is it as simple as grabbing a handful and pulling it out?

Is it necessary to do so or can I just leave it all in there and let it continue to get larger and larger? I figure the larger the wad is the more nutrients it can uptake and with nitrates at 40 I want to leave all that I can in there.]
 
[So as long as there is room for it to grow I can just leave it there?

So then am I to understand that the purpose of harvesting is simply to make room for new growth which takes up nutrients as opposed to removing nutrient laden old growth to prevent it from leaching back into the water?]
 
[I agree with Matt on this one. Your objective should be maximum growth for maximum nutrient export. When it gets big it starts shading itself out and getting to the limits of it's physical boundaries pull a wad out!]
