Not a ton of help, but the only two I'm really familiar with are DNA (Dallas North Aquarium, off Trinity Mills Rd.) and Fish Gallery on Greenville Ave. Those both usually have several interesting things, but aren't nationally known or anything. I get the impression that there are a couple really nice ones farther west, but I don't head out there much, hopefully someone else can chime in.
